Redfish recipe

I had to weed through a bunch of sharks to finally get the redfish for dinner and was super tired when I got home. My favorite way to make redfish is grilled on the half shell or blackened in a skillet, but sometimes I get back from a long day and just want to do something easy without making a big mess, and in that case, baking fish is definitely the way to go. This recipe came out really good and was super easy.

Camping in Baja decades ago, one could not cast a lure off the beach without one of those hound fish attacking it.  Never tried eating one, but rather catch something than nothing.  Nice fishing action, and tasty looking recipe -- had me salivating -- LOL.

I hear houndfish is actually pretty good. I may keep one next time.
