Generally nowI shoot at 1080, 120fps, narrow view. Then I edit in FCPX (Mac) and make the movie in 720p. That give me the ability to zoom in a bit. A major problem with a GoPro is the lens makes most things seem too far away. That is for the head mounted camera. I mount an older GoPro 3 in a rod holder and that one is 1080 at 60fps, medium view so can make my butt look smaller :wink
If you have a GoPro 4 black or 5 you can shoot at 240 fps and get some super smooth slow motion, but you won't be able to zoom in much. Most of the videos I just posted I made the 1080 zoom to be effectively 720 most of the head shots.
Of course this is for tarpon. You don't need high fps for redfish.
Oh, and I was using a marabou bait fish pattern. Often I sure a faster strip for juvenile tarpon. Seems I miss fewer strikes. Large tarpon I slow down a lot or just twitch.

You've got it pretty much dialed in fishing and shooting the action!
