You'll be able to hit some good reefs and hard bottom within 15 miles, but with usual August weather you can certainly venture out even deeper. Red Snapper season will be open on the weekend days (Friday, Saturday and Sunday) and all of the other snapper species will be available. Grouper is also open during that time. For trolling, Dolphin (Mahi) and possibly Wahoo and Kingfish. Search on line for locations of the numerous public numbers listing wrecks, artificial reefs, etc. When you get here, check with the good folks at Half Hitch Tackle for bait, tackle needs and advice - https://www.halfhitch.com/stores/half-hitch-tackle-panama-city/fishing-reports. They have stores in PCB and Destin.
