Fishing out of Key Colony Beach next week...

My brother and I are coming down next week and plan on renting a boat Monday-Thursday. Forecast looks like it might be pretty choppy in the ocean. We had planned on hitting the reefs, doing some trolling, maybe the hump, but don't know if the winds are going to knock some of that out of the question...
What should I look for on the gulf to get some bottom fishing in, if the ocean is too rough for us? We'd like to put some snapper and grouper in the cooler (who wouldn't right?)... maybe dive for a few bugs if the weather permits... any tips?
I saw a website that sells gps coords for "fishing spots" and "lobster spots" but I am leery... I am familiar with Bamboo Banks on the gulf side, used to shark fish there as a kid, but that is about it...

btw...my brother and I grew up in Marathon, our parents owned the South Seas Restaurant, but moved to NC in 1987...
