My buddy and I are heading over from England for 10 days at the beginning of March. We've fished Florida a fair bit but never the Everglades. What we would ideally like to do is a bit of DIY wilderness fishing over 4-5 days and camp as we go.
Anyone know a good outfitter who can gear us up with decent kayaks and maybe drop us off and pick us up somewhere? Any other thoughts and ideas would be welcome.

I used them once and rented an entire canoe/camping trip, they had everything loaded and in waterproof containers upon our arrival(price included canoe, tent, all camp supplies * excluding food/water)
They were pretty good but if you don't have your own camping stuff it got expensive. If your traveling from overseas they could set you up with everything you need and they can take you out via boat and drop you off with your canoe/kayaks at a specified location and then pick you up a few days later.
I highly recommend bringing a handheld marine gps for this area... you will feel much more comfortable navigating through the vast creeks/rivers/bays. I know they gave us a PLD device incase of an emergency, but I don't think they had rental GPS units... I could be wrong though.
