real low fire for about 3 hours...
seasoned cajun style and basted with beer at intervals....
we shared ours with the main bird for the soirée with friends....

What kind of smoker and what cooking temp? I brined and smoked one and it did not turn out very well. Still looked raw, but I actually cooked it too long. (175 degrees internal) Very dry.

five hours about 1.5 quarts of water, added wood chips five times thermometer said 165-ish. I couldn't get to the recommended 170 degrees. The thighs could have used a bit more time/temp but the breasts and drumsticks were perfect and moist.

Went to a dinner party for Thanksgiving so next weeks main mission is to find a great deal on a bird to brine and smoke in the coming weeks.
