Cobia Help...

Never had to prep it for the pan. I got a couple filets from Publix and looking them over it looks like theres littlt bones on the thin side and a bigger set running down the filet? I was hoping to pan roast. Should I buther it into nuggets?

    Not sure how they filleted it as I never have bones when I clean mine. Fried cobia nuggets are grape at, but a pan roast would work very nice too. It's also a dense enough meat to grill, I baste with a butter, lemon and some fresh herbs while grilling. Cobia is one of my favorites, enjoy whichever way you do it.

    Don't forget a little salt and pepper. Seems less is more for this fish.
