Sails, big dolphin, blackfin everything. To get offshore your going to need a good sized boat.
    We go every x-mass it's a blast.Our boat is a 30cc.Seas anywhere from 2-4.5-7's foot range.
The rougher the better. At least I find this for sails. This is in the current. You could get away
with a 22-24 foot boat but I wouldn't go much smaller.Bring warm rain gear.

Hopefully some sails will be around as said above. Live bait will be king- ballyhoo, pilchards, gogs and blue runners. Dolphin would be a bonus but certainly possible. Tuna, especially on the humps. All your mackerel (kings, cerro and spanish) plus solid opportunities for wahoo. The reef provides a constant bounty of snappers and grouper. Grouper season closes after December 31. On days when it is rough head north into Florida Bay. Run minimum of 7-8+ miles for wide open bite on spanish mackerel and fun mangroves. Seatrout, maybe a cobia, and a few groupers too. Sharks for fun. Chum and they will come.
Happiness is the journey, not the destination.

i'll be bringing a 21 contender and will have young kids on board, so fishing will not be that serious.
I've taken them yellowtailing and mangrove fishing that's about it. Hopefully those will be biting then, thanks for the input.

Even the reefs might be too rough for young kids that time of year
but YT and grouper fishing will be good.
