How to cook a six pound Boston butt?

    Another method I discovered on the Big Green Egg forum is called the "turbo" method. Basically, on a BGE bring the dome temp to 350 and smoke the butt unyil you reach an internal temp of 160. Then double foil wrap the butt put back on the egg until internal temp of 195-200 is reached.This should take something like 6-8 hours depending on the size of the butt but the temp readings are controlling. Let rest for about an hour and you are good to go. I did this method last weekend and the butt was great....I could not tell the difference from the historical "low and slow" method of 225.Good Luck!!
