Pan Seared:
The wahoo to the left was rubbed in sesame oil and seared on high heat for 30 seconds a side. On the right, I rubbed hot sesame oil, then added sesame seeds, and pan seared for 30 seconds a side. Then placed both on a plate in the freezer for 10-15 minutes. Makes the fish easier to cut.
Teriyaki:
Marinated the wahoo for 30 minutes in Veri Veri Teriyaki.
Heat oven to 350
Place cast iron skillet on med-high heat
Add marinated wahoo to skillet-1 minute/side
Place cast iron in oven for 4-6 minutes depending on thickness.
