I'm a novice, but the guys at the shops really have recommended white schminnows for the beaches. I've caught a few trout out there on them at the crack of dawn. White/chartreuse clousers as well.
similarly, assuming you mean off the beach, I agree that white Clousers, Deceivers, and Schminnows are the way to go. I was out Sunday and it was gorgeous. I was fishing white Clousers and I got jacks, ladyfish, a flounder, and many refusals by snook. My friend was using a Schminnow, and he got the same, but a snook as well.
