    Good morning, and a happy Thanksgiving!

    Had no way of knowing that it would be neccessary to dip into the Salt water tackle to get the bird ready for today. Even with a new, sharp, pair of poultry shears, cutting out the backbone of the twelve pound gobbler wasn't easy going. Then the frustration set in when I tried to break the breast-bone to flatten it out. The sucker wouldn't budge. So, I went down in the basement and pulled out the large rubber mallet that pounds in our sand-spikes. Gave the turkey a few good whacks, and it was done.

    Agree Nick. I placed our bird on the floor (in a bag covered with a dish towel) and stepped on it to break the breast bone. HAPPY THANKSGIVING folks!

    Spatchcocklng sure does leave the thighs and legs flapping. After a two day brine ours turned out the best I've every smoked.
