Top pic is Canadian Bacon made from pork loin. It was delicious beyond my wildest dreams.
Below is corned venison made from hind 1/4. Also more delicious than expected. I have had Canadian bacon the last two mornings with over easy eggs.
The corned venison was eaten for dinner, sandwiches, and tomorrow morning I will make corned venison gravy on biscuits.
The recipes are quite simple as long as you have time and room in fridge. They both need to cure in fridge for 5 days minimum.
And I wonder why I can't lose any weight. LOL
