Don't see these individual cuts much anymore. Seem to be meatier than the beef back racks so picked up a few along with some pitiful short ribs. Marinated over night in Stubbs Beef Marinade. About 4 1/2 hours in the pan, rotating every so often and spooning some of the marinade on them. After 4 1/2 hours, place on the smoker rack to firm up. Nice and tender. Some biscuits, green beans and taters rounded out the meal. Wood of choice was oak/cherry mix.

I usually use Badia Mojo criollo for beef, but thought I would try this Stubbs out. I like several mustard base sauces, but usually for chicken.
