Gator/Seafood sausage??

4WARD4WARD Cross Creek,FLPosts: 2,113 Captain
We have a bunch of gator trimmings that were put aside and frozen.
Plan is to grind with a mix of fatty pork and basic(leggs #10) sausage seasoning.
I am going to experiment with a little and add some shrimp, scallops to the mix. Maybe some cajun spice, trinity, garlic, sage, basil.
Anyone do a seafood sausage of sorts?

    No adjustment needed.
Possibly one of my greatest inventions.
It's so good, I'm not sure that I want to post the recipe. LOL
