Thought I would try wrapping in kraft paper this time. Wrapped around 175 IT. Pulled at 205. Wood of choice, Pecan/Cherry

Actually I think the foil helps with temps more. The paper is suppose to help more with bark. I do not wrap until I see the bark I like for my smoker. Usually in the 170-175 IT area.
