Best time for amberjacks, groupers, cudas, and sharks on fly?

Looking to book a trip and do some offshore flyfishing and running sinking lines around the reefs/wrecks.  Primary targets woujld be AJ's, but would also like shots at big cudas, grouper, cobia, etc.  And yeah, I've got the specialized fly equipment for that and know what I'm in for.  Also, I know everyone hates them, but I have a soft spot for wrestling bull sharks, duskies, etc on fly gear.  What time of year would you guys recommend for this.  Thinking May/June.
