cornbread pancakes

made some cornbread pancakes(cornbread mix cooked like pancakes) and cooked up a wild pig rump with a pot of pintos.was going to cook the pig on the smoker, but it was just too hot to cook outdoors. i saw the pancakes on DDD and tried it out. i'll be making these at the camp this year. they're outstanding.

sure. soak beans for an hour or so. cut some bacon into 1" pcs and saute garlic, onion, pepper and celery till soft. add beans and cover with 2" water. bring to boil and lower to an aggressive simmer and cook covered for 3-4 hrs.

plug pork roast with garlic and rub with favorite rub. sear or brown in big skillet then transfer to pot or slow cooker with some veggies and spices of choice with a stick of butter and a can of beer. cook till it pulls apart. covered.

make a regular cornbread mix and get it to a pancake batter consistency and cook like pancakes in a big skillet or on a griddle. these are great at outdoor cooks if you have a blackstone griddle cause you can cook as many at a time as you need. cooking in a skillet i can only cook 3 at a time. i really like home style cookin like this.
