Cajun Seasoning For Smoking/Grilling

To grill: rub on flesh side, then use olive oil or grape-seed oil & rub again then grill skin side down 10 a side for kingfish, steelhead (very good), type stuff - flip over, go between skin and flesh, removing skin.  Lightly sprinkle with seasoning, lid back on for another 10 minutes.

Smoking: use this the way you would your normal salt (enough salt is in there), stick it in the fridge let the pellicle form, wash off and smoke - leave on if you like a strong Cajun taste.
