Good Woodsy places to go freshwater fishing from Kayak...Suggestions?

Good Afternoon! I am looking for a good place for freshwater kayak fishing. We are in Tampa Florida and love going and finding lakes that are not very often traversed. Dobes Hole has been a favorite spot for many years! I am looking for a new place that we can check out, in a more woodsy setting and preferably not the kind of lake with a boat ramp and a lot of activity. Quite, peaceful and in the woods! We have kayak dolly's so there can be a bit of a hike, but under a mile would be best... Also trying to stay within an hour of Tampa, but if it's a REALLY cool spot then we would definitely go further!
