Christmas dinner

Got 21 maybe 24 coming over for dinner tomorrow. Just got done prepping a bone in 24lb choice and a 18lb boneless prime rib for tomorrow. Getting up at 3am to crank up the smoker for them. They're gelling for a few hours on the countertop to get to room temp before getting them on the Traeger.

Got 20lbs of King Crab and 15lbs of shrimp to boil too.

Smoked 5 racks of ribs today for snacks tomorrow.

What you eating?

    I'm up in NY with my in laws.  1/2 of them at the party were born in Italy.  I guess it's a tradition to cook 7 types of seafood and ~13 ways.... Mostly great food.  However, don't ever, under any circumstance, eat octopus made by an Italian.  Basically tastes like rubber with olive oil. 

    Mostly had shrimp, salmon, and clams tonight...  Lots good food!  I can honestly say that the food up in NY taste better than in FL... Pizza, Chinese food, bagels, etc.. All better.  Im convinced they add crack or something in the food!

    The other "odd" tradition is to do the Christmas meal and gifts on Christmas Eve.

    Honey Baked Ham.  Stood in line yesterday morning at 7am to get one.  Christmas tradition here.

    We are headed over to a distant relative's house this evening for prime rib.  We normally just have the MIL, the grand daughter, and grand son with us, but the girls wanted to do something different.

    spiral cut ham from Publix, mashed potatoes, mac-n-cheese, collards, green beans, corn bread, pumpkin pie, pecan pie. 

    Traditional southern Christmas dinner.

    Way to big of a prime roast, smashed w/romano, Sweets w/butter, crescent rolls and apple cobbler,
    Just my wife my son and I.

    I was visiting my daughter, her husband and daughter.  He recently got a great electric smoker (Masterbuilt).  He smoked a pork loin brined in apple cider and cloves for Christmas Eve served with Texas toast and M&C, He also smoked a turkey for Christmas day.  While he was doing the smoking, I made mashed sweet potatoes baked with marshmallows, Sausage stuffing and mac & cheese.

    I agree 100%, but you have lured the charcoal Gestapo. Charcoal is bestest!!! Lol

    My last smoker was electric that used wood chips, no water bowl. Best smoker ive ever owned.

    He called yesterday and one of the things he said was :"Pops, you wont believe how good the food is up here"

    I said "your forgetting I was raised in Philly" :) .
    THERE SHOULD BE NO COMMERCIAL FISHING ALLOWED FOR ANY SPECIES THAT IS CONSIDERED OVERFISHED.

    What type of food is better? I uave zero doubt old world food and continental cuisine is better.

    But hows the BBQ? The conch fritters? Fried mullet and grits? Biscuits and gravy? Po boys? Collards? Boiled shrimp? Sweet potato pie? Clam chowder (check cedar key)?

    You were doing well until you got to "clam chowder". Cold water clams (and lobster, oysters and crab) are so much better than the ones down here.

    Agree. Bought a Treager. It's electric and eats wood pellets. Nothing better and I've had them all. Set it and forget it till the bluetooth thermometer goes beep on my phone.

    The down side is pellet grills do not put on a smoke ring and bark. I got at least 2k invested in my 1/4 plate steal Yoder. Zero smoke flavor.

    I just one of those thermometers this past year. Don't know how I cooked without it. Love the one I have

    Then you don't know how to use it. The 2 prime rib roasts I cooked had perfect crisp/burnt bark on both. One was boneless and one was bone in. 

    People over for Christmas even commented on it. Learn.

    I have owned it 5 years. I know everything about a pellet grill and think this is the best one. 

    My brother has a stick burner and no comparison.

    My old school direct heat handmade brick smoker was 10 times better.
