Black Sea Bass

Caught a bunch of BSB over the weekend with the kids.  Had a great time - constant action.   I cleaned them and left the skin on (after scaling) as the filets were so small I was afraid it would damage the meat by taking off the skin.  Then took to The Pearle in Lanark and they fried them up for us.  Really good and super friendly service.  We also caught some Key West Grunts but I threw them back as I wasn't sure what they were.  Do you guys also like to cook Key West Grunts?

    Haven't had grunt in a while but I always liked it. Pan-fried with slaw, cheese grits, sliced tomatoes and a cold beer is mighty good eating. Takes a lot to make a meal though.

    Nothing wrong with the grunts other than small size of fillets but same issue with the BSBs. Fresh they are fine, not sure about freezing them.

    Boy I am soooo happy to hear the Pearle is still up and running. There is nothing better than sitting by the window, eating a great breakfast, and anticipating another great day of fishing and fun in lovely downtown Lanark. 

    Only a few more weeks and about a hundred tax returns between me and sitting in that chair.

    If it hadn't been for grunts and seabass, I'd have gone hungry after a LOT of fishing trips.  Any grunt over about 10 inches got put on ice in my boat.  I always figured that people filet and eat speckled perch out of fresh water, so why not a similar sized fish out of the salt?  I had some numbers that produced 13-14 inch grunts and 15+ inch seabass dependably.  If it was a quick trip, I could run to those numbers about 6 miles of SGI and catch all I wanted to clean in an hour or two.

    The taste of the grunt is very mild and the flesh is nice and firm.

    BSB is one of my favorite fish.  Fried, grilled, or raw.
    My favorite sushi place used to try to keep BSB, but ran out fast.
    The Sushi chef's eyes would light up when I walked in if he had it because he knew he was about to relive me of an extra portion of my hard-earned cash.
    I have no problem with putting the filet knife on a grunt either.
    There's nothing more enjoyable than suprise morning sex...

    I think so

    Of the thousands of fish species found in Florida waters, the vast majority have no specific regulations at all. These “unregulated” species include some very popular sport fish that are commonly caught by recreational anglers such as white grunt, gulf kingfish (whiting), gafftopsail catfish, ladyfish, cero mackerel, blackfin tuna, bonito, great barracuda, gulf kingfish, pinfish and jack crevalle. The list also includes thousands of other species that are less frequently targeted but sometimes caught incidentally including spadefish, American eels, silver perch, croakers, hardhead catfish, cownose rays, some stingrays and many others.  The term “unregulated” can be misleading because standard recreational gear requirements still apply, and there is a default bag limit established by Florida Statute for any species harvested by a recreational angler. Harvesting amounts that exceed the default recreational bag limit (which are defined as commercial quantities) and commercial sale of all unregulated species would require a saltwater products license.  

    It is not listed as a reef fish or regulated species.

    I was always told I couldn't keep more than 199 pounds of grunts.  200 was considered commercial harvest.  :)

    I know I have had about 50
    of those little grunts to clean,
    after a 2 day weekend.
    As for bait, I was on one side of the boat and chuckg, fishing the other.
    my bait kept getting slammed! 
    I would come up empty?
    Chuck slid over to my side of the boat. 
    He butterflied the biggest grunt we had. 
    Sent it down and reeled up a big ole red grouper.

    Grunts - AKA Key West Pork Chops. Very mild sweet meat, great for a fish fry. Usually get some bigger models in the deeper water.  They'll freeze very well if you remove that small red line and vacuum seal them.  Great fun with the kids, they've saved many a trip for me and my family.

    Really cool thread.

    By the way - The Pearle could be the new Julia Mae's....I know the JM fans will be happy to hear this - The Pearle is better in many ways.  Really fresh vegetables.  Country music.  Key Lime Pie.  Cook your catch either fried or blackened.  Great service.  BYOB.  Hope we can all support it!

    I do not believe  gulf kingfish (whiting),  are not the same thing - similar but not same

    I catch gulf kingfish inshore in deep pockets - they are colored like a sauger or walleye -  multi color brown patchy -  whiting are white to silver in my eyes.

    Southern kingfish is colored. Gulf is white or silver only.

    I've caught the ones your talking about before.  My neighbor called them ground mullet.  They kind of look like a whiting but they don't have the whiskers like whiting.
