little baby pigs
cleared out some of my pig problem last month. Finally had time to cook them up today.
Soaked them in coke over night( never tried that before). Dried them off and let them come up to room temp for a couple hours and rubbed them down with my modified MDM rub and smoked with cherry for 2 1/2 hours at 250 ish. Wrapped them up and put on the stuffed peppers.
Another 1 1/2 hours at 275 to 300. Turned out really good, back strap was possibly the best bite of pork that I have ever tasted.
And you cant beat a bacon wrapped jalapeno.

use flat coke and espresso coffee. or brown sugar and spices for a rub. The coke is sugar and that will change the flavors of any meat.

How big were those piglets? Reason I ask is I had two tiny ones come by my treestand a few weeks ago. They couldn't have been more then 7-8lbs each.
I think they were orphans cause momma never walked out. I let them keep walking. But your pics look good!
About 3 or4# or so undressed.
Like I said, Dealing with a problem.. They didn't go to waste!

Like I said. That dish looks great. Honestly, two things stopped me from shooting them.
1- My kids would have been upset since they were piglets
2- 3.5" buckshot would have destroyed them. If I'd had my 22 I think I would have head shot one and just called it a big rabbit! lol..
