I chose my one favorite. Mashed. There are not a lot of things you can't eat mashed potatoes with. I've even dropped a scoop in chicken soup (as a hangover helper). The next day we make potato pancakes with them. They are the ultimate comfort food, right next to bourbon
Pontiac Reds which are an old heirloom developed back in the 1930's especially for the Florida climate and sandy soil types. Also plant a Russian Purple which sells very well at the Market.
I think we're overlooking an essential potato cooking issue - leftovers. I love to take leftover mashed potatoes and shape them into a slider size hamburger shape, dust them with flour and seasonings then fry the for breakfast. Leftover baked potatoes? No problem. put them on a baking sheet, smash them to about 1/2 inch thick (keeping them as intact as you can) season the bejabbers out of them, add a little cheese on top and broil them till crispy and the cheese melts. Yum!

Taters Au Gratin at Christner's on Lee Rd, double yum.
And one of my favorites: Slice baking potatoes in half the long way, spread vegetable oil on lipped metal baking pan, add your favorite spicy seasoning to oil (I like Tiger Sauce), place potatoes cut side down in oil/seasoning, bake at 425 for 30-35 minutes. Triple Yum.
