Are you looking for inshore or offshore? Inshore, I would recommend Capt. George Gozdz, host of Reel Time Florida Sportsman Television show, 772-284-5922, Flatlined Charters or Mike Holiday, 772-341-6105 or Ed Zayak, 772-485-3474. No hesitation recommending any of these three Captains knowing them from previously exciting fun days of catching. Offshore, I'll defer to others who know those Captains.
Mike Holiday, Ed Zayak, and John Earhart are all good choices. What are you looking to fish for?

In all seriousness, I fish for reds/trout primarily here at home. I wouldn't mind targeting those but I'd love to get into something that we don't have as much around here, like snook and/or tarpon.

All of them can put you on snook and tarpon in the river. Holiday is probably the best of those 3 if you want to get on the beach for tarpon, jacks, permit etc. Earhart has a offshore boat if you care to venture into deeper water.

Ended up booking an inshore trip with Pat Price. I really wanted to do the offshore deal, but it's hard to justify the cost when it's just me by myself. Looking forward to it!
