Sous Vide lobster tails.... Fool proof and fantastic

Been playing around with Anova sous vide...

Take the meat out of the tail
Add lobster, butter, small sprig of fresh basil, and a thin slice of lime to the bag and vacuum seal
Put it in the water at 134*f for 40mins-1hr
5 mins before its done melt some butter in a ziplock bag in the water

Open the bag, remove the lime and basil, add the liquid to the drawn butter

Because of the controlled temp, the lobster never overcooks... My new favorite way to cook lobster tails.

Rib eye also cooks @ 134 for an hour, just dry it off and sear.... Viola surf and turf the easy way.
