Saucy Redfish pasta

Got a nice little 23" reds yesterday and invited it home for dinner, and wanted to try something different. I put a couple table spoons of Frank's hot sauce, and drizzled in some EVOO and coated the fillet, dusted with a little Redfish Magic seasoning, added a few chunks of butter, laid it in a pan, and stuck it in the over at 400 for about 10-12mins. While cooking I pulled out some fettuccini Alfredo(frozen) from trader joes(first time trying) and nuked it in the microwave for a few minutes, stirred and nuked for another few. I pulled the fish out and was able to poke with a fork in the thickest part and felt no resistance and it looked flaky(but still moist and delicious) so put on the pasta and went to town. it was pretty good, and super easy, cooking the hot sauce took a lot of the heat away but still had good buffalo type flavor and combined with the EVOO kept the fish nice and moist.

the pic is pre-cook, sorry I didn't get a post cook photo as it went straight onto the pasta and disappeared!

I just started using redfish magic, it's pretty killer on most fish. Had some blackened Mahi that was really good.

I'm assuming the Trader Joes will be in the pantry again soon?

Yea the magic is good but pretty strong so I am careful when applying especially if serving to others. Yes so far I have been pretty happy about trade joes frozen foods, had the pasta and a few chicken fried rice options. Most are at or under 5$, so hard to get a 5 dollar holler these days, even fast food is getting expensive!!!
