Fresh torillas for fish tacos.

Tortillas!

Don't buy the pre-made stuff every again. It's way to easy to make your own. They keep for several weeks, have not tried freezing them.

1. Buy some Masa Harina (basically corn flour that has been treated with lime to release nutrients and allow it to get doughy). Publix has it.

2. 2 cups Masa Harina, 1.5 cups water and a little salt.

3. Hand mix for a couple of minutes add water if too stiff or Masa if sticky.

4. Make about 16 balls of dough. Flatten them to about 4-5 inches with your hands, a tortilla press, or a rolling pin with the dough in a dish towel. Should not stick but you have to be careful peeling the flattened tortilla off the towel.

4. Cook on a heated skillet (cast iron is best) for about 50 seconds a side. You can reheat them after the initial cooking as well. Don't use any oil or grease.

They are SO much better than the store bought ones. And the ingredient list has no fat or strange stuff.

    You need to go to Walmart and get some La Providencia made by Mission and all natural. Dirt cheap and incredible tasting. Saves on all the strain , pain , muss, fuss and bother.

    My Nephews wife is from Mexico and she disagrees with you on this. She says it is a tad better to make your own but due to time and life it is just about as good and a heck of a lot less time consuming with a minute difference in taste.

    I agree with Spinyman. Back several years ago when I was doing commercial and government construction projects we had a sprinkler system company that did all our landscaping/sprinkler work. There were about 20 Mexicans on the crew who brought a huge plastic container of taco fixings every day for lunch. The tortillas came right out of a plastic storebought package. I'm going to try Cyclists' recipe but it's hard to beat the tortillas made by Mexican owned companies.

    I'm not comprehending your post. What exactly are you attempting to say? Does it bother you that Mexicans worked as landscapers? If so, does it bother you that I also had Mexican concrete crews, block masons, framers, drywall hangers and finishers, painters, tile setters and one electrician. It may also interest you that one of my clients hired an alarm company and guess who showed up to do the installation; a Mexican. I hired folks who wanted to work and didn't mind showing up at 7AM every day without fail. Americans don't want to do that any longer so I gave my money to those who were willing.

    It seemed like you were using a Mexican landscape stereotype to add credibility to the Mexicans in your story.....sorry just a joke(obviously not very good) but I understand completely there are a lot of people claiming there are no jobs when they really are just too lazy to work. I wish we could trade some of our fat lazy, using ebt/snap to buy candy and ice cream turds for some more hard working honest people regardless of nationality.
