Anyway, do y'all have tips on cooking fish on the different types of wood planks available? This style of cooking is new to me.

Here is the result:
The flavor was good, and the texture of the flesh was very delicate (making me wonder if it was the fish or if I didn't cook it long enough). Will do again, and perhaps try some of the links that Baits Out posted.
EDIT: going to try oven next time. Epicurious suggests 500 deg for 15 mins.

When using unstuffed fillets I make a compound butter with tarragon and don't cook as long.
I used to dislike Salmon until a friend cooked cedar plank salmon on the campfire and I have been hooked ever since.
One thing I have found is with cedar plank, the first use they put a bit too much cedar taste in the fish. Second time,(if you don't burn the plank) is more mild and to my liking.
Soak the plank for a few hours, oil it a bit with some garlic infused oil and season the fish as you like. Cook on a medium grill until done.
One thing we have used lately is the Pineapple Habenero marinade from ****'s , excellent on most fish and not too spicy hot. The Caribbean mango is good also.
