Another easy thing you may want to fix this weekend . . .

Cajun Greens and Rice


1 lb (450 g) fresh greens, tough stems discarded and
the leaves torn into pieces
2 1/2 cups (625 ml) chicken stock
1 cup (250 ml) uncooked long-grain rice
2-4 cloves garlic, finely chopped
2 tsp (10 ml) cayenne pepper, or to taste
2 tsp (10 ml) paprika
2 tsp (10 ml) dried oregano
Salt and freshly ground pepper to taste

Combine all the ingredients in a pot and bring to a boil over
moderate heat. Reduce the heat to low and simmer covered
until the greens and the rice are tender, 20 to 25 minutes.
Serves 4 to 6.
