Recipe is good for twelve complete wings.
Preheat oven to 250.
In a large Zip-lock mix 2 level tablespoons of baking powder and 3/4 teaspoon of salt .
Pat wings dry.
Add all wings to the Zip-lock and shake until all are coated.
On a wire rack on a cookie sheet arrange wings meaty side up.
Put in oven for 30 minutes.
After thirty minutes set oven for 425 and cook 30 more minutes. Rotate cookie sheet 180 degrees and cook another 30 minutes or until golden brown. When ready, remove from oven and let rest for 5 minutes.
While wings rest, or before, melt one stick of butter, then add Tobasco sauce until the sauce is more orange than yellow or to taste. (I prefer a deep orange color). In a bowl pour sauce over wings and mix thoroughly. Serve with Bleu Cheese and celery and enjoy.
