Curried Coconut Chicken

Can't wait to try this great sounding quick and easy recipe.

2 T vegetable oil
2 T curry powder
1 onion, chopped
2-4 cloves garlic, finely chopped
2 lbs skinless boneless chicken breasts or thighs,
cut into 3/4-inch pieces
1 14-oz can coconut milk
1 15-oz can diced tomatoes
1 t brown sugar
Salt and freshly ground pepper to taste

Heat the oil in a large heavy skillet over moderate heat and stir
in the curry powder.

Cook for 1 minute, stirring constantly.

Add the onion and garlic and stir for 1 minute.

Add the remaining ingredients and bring to a boil.

Reduce the heat and simmer covered for 15 minutes.

Serves 4 to 7.
