Does anyone have a good Jambalaya recipe they can share? I have a couple but they do not compare with some of the Jambalaya I have had along the Louisana Coast.
ok here it is. Don't tell my Cajun girlfriend I shared it
One whole chicken quartered (you can buy it like this)
3 cans rotel
2 red bell peppers
1 large onion
celery
lots of garlic !!!
large link Smoked sausage
couple bay leaves
parsley
Parboiled rice
Boil all the chicken and add vegetable discards (cores , butts, etc) season as you like, cook sausage in pot and remove. Drain chicken and KEEP THE BROTH (this will be used for the rice). Slice and dice up all your veggies and cans of rotel and put into the pot you cooked your sausage in. Let chicken cool and pick the meat away from bones and add to your pot. Add everything EXCEPT BROTH and simmer for about 45 min.
Add rice add chicken broth. I use 2 cups of broth for every one cup of rice. I usually use 2 cups of rice for this recipe. Simmer for about 1/2 hour. Keep tasting to see if rice is done, add hot sauce, everglades seasoning, tonys, etc. You can add shrimp, etc at same time as chicken.
