Jambalaya Recipe

Does anyone have a good Jambalaya recipe they can share? I have a couple but they do not compare with some of the Jambalaya I have had along the Louisana Coast.

My Gf uses 'Emeril's Kicked Up Jambalaya' (FoodNetwork.com)
That's what we're having for dinner in ~2 hrs... Delicious...

A woman and her husband from Houma,LA were camping with us and gave it a thumbs up and admitted they were expecting it to suck.


Edit: I have subbed in gator meat instead of shrimp, even the kids ate it. Chicken works too but I like shrimp or gator better.

The recipe we use has Chicken (white & dark), Spicy Andouille Sausage & Shrimp... Gator sounds like it would be good too...

I like a wet jambalaya rather than the one posted. More like a thick soup.
