Sea Bass with Apples
6 T butter
2 large Granny Smith apples, peeled, cored, and cut into thin wedges
¼ C honey
4-6 6-oz sea bass fillets
Salt and freshly ground pepper to taste
All-purpose flour for coating
1 beaten egg for coating
Dry bread crumbs for coating
Heat 2 tablespoons of the butter in a skillet over moderate heat and sauté the apples until tender, about 10 minutes.
Stir in the honey, reduce the heat, and keep warm.
Season the sea bass with salt and pepper and coat by dredging in the flour, dipping in the egg, and then dredging in bread crumbs.
Heat the remaining 4 tablespoons of butter in another skillet over moderate heat and sauté the fish fillets until golden brown on both sides and the fish flakes easily with a fork, about 3 to 4 minutes per side.
Transfer the fish to serving dishes and spoon the apple mixture over them.
Serves 4 to 6.
Originating chef’s notes: The sweet tartness of the apples and
the crispy fried fish make an unexpectedly good combination.
Use any firm white-fleshed fish such as catfish if sea bass isn't
available.
I like simple quick and easy recipes like this. Usually make them often
as a kitchen standard.
