Today's Cook

Wife and I had a few people/family over today. Ribs were on the menu. This time I cut the spares to a St Louis cut other times I cook them whole. I made my baked beans that everyone enjoys. Yesterday the wife made potato salad. I also used my cast iron cornbread pan (shaped like ears of corn) for the first time, but the ears stuck, so we have piles of crumbled cornbread, but it was still pretty darn tasty.

    These ribs look very very tasty.
    3000 miles of Ocean in the middle but the ribs' charm hits in the same way :grin.

    My wife is curious about baked beans. Everything together and then in oven ?

    P.S. Did you have a fart contest then, it looks dangerous in this sense :grin.

    I start with Campbell's Pork N Beans and drain the liquid out. I chop up an onion or two as well as a bell pepper. Mix that in with the beans and today I chopped up 3-4 slices of bacon, but other times I will throw in some leftover pulled pork. I then add brown sugar, pancake syrup, and ketchup, I eyeball everything so I don't have exact measurements.. I top it off with more bacon on top. I'll cook these minimum 3 hours to 4 hours until they thicken up. I don't fart, but the more beans I eat the more the bulldog does! :)

    Many of the ingredients are not easy to find here, but the bacon in the beans soup is an interesting idea. We use the skin (cotenna) to give the flavour, but bacon is better because is more edible (the skin sometime is like gum).

    Boneless skinless or bone in skin on? I ask because I get boneless skinless from Costco and they have NO flavor. Tried a multitude of rubs and marinade and they tase like watered down rub or marinade.

    I forgot to mention my new Yeti cooler my wife bought me for the party. It keeps ice for hours!

    same problem here ... only thing that would stop the sticking was a heavy amount of PAM

    finally gave up and just used a mini muffin tin ... very tasty and crusty w/o sticking

    I bought it pre seasoned, heated it for around 15 minutes at 425, then brushed melted butter on it before pouring the batter. I did use too much batter for each "ear". I will try Pam next time.

    Only thing I would change is "Bushes Baked Beans" over the campbells. Looks great !!

    I like Bushes Baked out of the can, with maybe some hot sauce added. The Campbell's don't have as much flavor and go well with all the stuff I add (I'm following mom's recipe more or less).

    I use Bushes as my base bean. Then I add browned hot whole hog sausage, onions, bell peppas, brown sugar(How come you taste so good, baby?), herb and spices, a little bbq sauce and top with bacon. Tarpon65's bean look incredibly delicious though.

    yeah the wife adds Worcestershire, chili sauce and pepper. She like the Smokehouse tradition. Gets rave reviews on them. Give them a try sometime.

    I use Bushes too, although I grew up on the Campell's pork and beans. I saute some onion in butter add brown sugar to caramelize them then add a couple cans of beans, than a bit of ketchup and some mustard and cook for a bit, Then into the bean pot, top with bacon (or not) and into the oven. Simple but good. I like the little tang the mustard provides.
