    Why would anyone eat amberjack?

    There are many better tasting fish.

    Any amberjack we caught we fed to dogs or hogs.

    Have had it smoked and grilled. Pretty good both ways, just clean past the shoulders and stay away from the tail where the worms live.

    Are we speaking of great amberjack (Seriola dumerili) ?
    In this case please adopt me as dog (it's ok also as pig :grin), here is one of the most appreciated fishes (personally I love AJ).

    Char-grilled Amberjack is awesome. Back Porch is usually great too, but sometimes when they are busy the service lacks.

    smoke kills the natural flavor of anything ... even smoked tofu is tasty

    different strokes for different folks .... the Japanese love the taste of bonito ... I'd have to be starving to eat a bonito

    I'm not saying AJ is inedible ... I just find the flavor of so many other fish to be preferable

    Yes, everybody has his personal taste, nothing more true.
    BTW about AJ I'm surprised because I was convinced that it was a worldwide very appreciated fish.

    When I was a kid growing up in Fort Lauderdale, big black ladies with long cane poles used to frequently fish at an empty lot down the street for mullet. And they DID KNOW how to catch-em!

    To us, the mullet I caught (gigged from the seawall) were for bait only.

    Have times changed that much?

    Mullet is usually pretty bad but if you taste the Cabras (Sardinia) pond's mullet you'll probably think to organize a weekly shipment to have them.
    My first time I didn't believe it was mullet. I left seabass and seabream for the mullets.

    My wife grew up in Seminole/Indian Rocks Beach in the 60's/70's. She said everyone down there smoked mullet and loved it. She gets it at Frenchies whenever we are down there.

    The first time I ever ate AJ was on a charter boat. There was an undersized fish that the mate said would not recover so he did a filet and release. Put pieces of AJ on a paper plate, threw some lemon pepper on it, microwaved it, added yellow mustard and white bread. It was excellent.

    First time for me was at a fishing club social back in 79 or 80. One of the members did a mystery fish and just seasoned and seared it, blackened I guess you would call it. Every single person that tried it loved it. Been eating it ever since.

    I seem to remember there is a big difference between east and west coast Florida mullet?

    The commercial name Lisa keeps popping up?

    What kind of fish do you like. which fish is more preferable?

    AJ and Mullet are both yummy.

    the amberjack that I tried were pretty large so that may have been why they tasted bad ...

    I just prefer the taste and texture of snapper ...

    mullet taste like mud to me ... even when they're smoked

    If the mullet tasted like mud, then they did not prepare it properly. If you remove the dark lateral strip, you may like mullet. You seem to prefer mild flavor fish. Do you like Mackerel?

    I live in TI, a hop skip and a jump from there. Smoked mullet is still very popular. My favorite is a orange smoked mullet. It is goot!!

    AJ is fantastic, unless it is even slightly overcooked. The more overdone, the less edible it becomes.

    Grilled with a touch of olive oil and some Cajun seasoning is my favorite way.

    Mullet taste depends on the environment where it lives and what he eats (like any other fish at the end, but mullet is more adaptable at the different environments).
    And he likes to live in the mud areas and unfortunately it doesn't also dislike the cesspool flows.

    Mullet from clean water is hard to beat fried
    I am glad to only be a bird hunter with bird dogs...being a shooter or dog handler or whatever other niche exists to separate appears to generate far too much about which to worry.

    I have never targeted Mullet. I have a cousin who does and does a giant fish fry every 4th of July. He fishes the St. Johns river and east coast. He can fry some great mullet. I think he cast nets them.

    Me neither (even because with lures they aren't easy to catch and I fish just with lures) but a lot of people here goes to fishing them.
    I tasted many time the mullets, in many Italian areas, but the ones I found really tasty are the Sardinian Ponds' ones (Cabras the more known, but also others).
    Others were between pretty disgusting and acceptable.

    If you are in the Destin area you should plan to visit the Acme Oyster House and get some of their grilled oysters, most delicious.
