We were in the keys last week and wore out the dolphin! Had a 30 wide get smashed and we all looked at each other like that is one stud dolphin! Get it to the boat .... thats not a dolphin .... WAHOO! After plenty of fluids while cleaning the dolphin, I got to thinking on how we could do something other than ceviche or sashimi with wahoo! The light kicked on!
1. Olive Oil
2. Blacken Redfish Magic (Paul Predohmes SP?)
3. Lime or Lemon
4. Gas Grille HOT
1. Clean the fish so that there is not one spec of red meat on it. I usually have a loin strip and a belly strip. Then cut them into 4 to 5" pieces.
2. Cover in oilve oil.
3. Dusting of the Redfish Magic.
4. Marinade for a few minutes.
5. Place the wahoo filets on the UPPER GRATE NOT DIRECTLY ON THE GRILL. 1 minute each side.
6. Refrigerate for 1 hour or so until cold.
7. Slice cross grain to desired thickness!
PERFECTION! you will quit eating sushi from the Japanese!
