Miamimuttonman Report key largo 1/26/14

Yesterday, was a hard day in key largo, as the current on the reef was very minimal, making the fishing very hard. The yellowtail did not want to eat well, till 1:pm when the current picked up a little, then the yellowtails started chewing good, after catching enough for the three guys dinner.
we headed into deep water to target the muttons and the king fish with live speedo, which are plentiful in most reefs right now.We ended up catching two nice kings after a 30 minute battle on 20 lb line.IMG_7404_zps7a161cec.jpgIMG_7636_zps225b594a.jpgIMG_1339_zps05c255af.jpg

    Some people might think this is crazy, but here goes. Bleed the king immediately, and ice him down real good. when you get home fillet him , before you get ready to cook him marinate in Italian Dressing in the fridge for 20-30 minutes (any longer and the dressing will cook the fish) get you grill as hot as you can. Place the fish on the grill and flip when the grill lets you flip it , don't force it. Do the same on the other side , second side won't take as long. Remove from grill serve with whatever sides you like ( I like wild rice) . Absolutely do not freeze the king ( if you do , send it to the smoker ). I promise if you do this the King Fillets will taste like a tender pork chop !
