Fryin hard to me means fryin till it is crispy just short of burnt.
I used to work with an ol cracker who would bring brim for lunch and fry them on the job site.
He liked little ones the best, he would remove the eyes, gills and scales and fry em hard.
We ate heads and fins, they were crunchy and good.

I got a BIL like that he'll keep them 2-3 finger brim & fry them crisp & eat them whole bones & all.

    Can't do it.

I know several brothers who will only eat wings fried hard. Won't touch em any other way.

Whitebait and smaller sardines are excellent fried "hard" and eaten whole.
I have to remove the heads from the whitebait for my wife, or she won't eat them, I have to do the same with shrimps, now that is a labour of love.

"Put 'im in da box. He'll fry brown and taste salty."
I love a bream just smaller than a man's hand.

I wish I could remember the last time I ate fried bream or crappee for that matter. Would give something for either one about now. We used to sit on the docks until late in the night catching Crappee, drinking beer and telling lies up on Allatoona.
