Holy crap that's gotta be oversmoked. 21 hours at 210 is nuts unless you're cooking a whole pig.

And everybody knows the fat cap goes on top, not on the grate.

Dp you know where that misleading anecdote came from (tetanus from rust)? It came from framers getting cut by their rusty steel plow while plowing through MANURE.

Ain't no chit on my rebar racks. Besides, they are always pretreated (fer nonstick) with shortening and a torch.
