One of the things I miss about not being able to eat pork is Country Ham and Proscuitto. Came across a menu the other day that featured Duck Proscuitto and figured to give it a go.
This is Day 2. Pulled it out of the salt and spice cure and wrapped it in cheesecloth to hang. 12 more days to go.

In the days before refrigeration, salt curing was one of the methods used to preserve meats.
Interesting. You can't eat pork but other high purine meats don't bother you?
Sunday night I finished it off with a Cherry Peppercorn sauce.

You really want to have something great, next time you fire up the smoker, throw a pair of ducks in. Ask Alan, it's fantastic.
You do NOT want to eat fish eating ducks! Some folks do but not me :puke The best wild duck to me is a wood duck and I'd guess mallards are good to but I haven't eaten any. very rarely do they get down this far S.

Oh, and I though it was spelled Prosciutto?
I have found that basically anything that tastes good causes gout, and prosciutto duck sounds like it tastes good.
I have had it for years and take meds for it to prevent attacks. I have never been able to trace the direct cause of it.
Most of the time it is a result of not drinking enough water.
