Fish Tacos Take Three - Recipe
Ingredients
• Fresh white fish (preferably Snapper) – Sautéed to your preference
• Kumato’s (a more dense tomato used in some pasta sauces, sautés up without getting mushy)
• Tomatillo’s
• Sweet Onion
• Fresh Garlic (very thinly sliced)
• Jalapeno
• Cabbage
• Cheese (preferably mozzarella)
• Sour Cream
• Salt to taste
Preparation
• Sauté fish and set aside
• In a new sauce pan, add olive oil and sauté onion, when 50% done, add garlic slices
• Then sauté sliced Tomatillo’s for 1 min
• Then sauté sliced Kumato’s for 1min
• Then sauté the cabbage and sliced jalapeno
• Salt to taste
Serve on a warm tortilla with cheese and sour cream…
