Grrr.... wish I remembered how I did the seared wahoo. Caught three of them on Saturday and I'd like to do the same thing again, but I don't remember what I did. Guess I'll wing it.
One of my favorite drinks with raw / rare / sushi fish. Everybody is different, but my all time favorite is soda water soda machine, followed by a dirty Bombay sapphire martini, followed by natural light. Soda water and natural light are almost one and the same. Not sure why the boldness of a gin martini fits in, but for me it does.
