Favorite time to fish

guys,

I am planning 2 trips this year out of the Panhandle foer myself and 5 church friends. What are your favorite times/best times in your opinion of the year to fish? I love to bottom for grouper and and fish for Amberjacks and Cobia. I am thinking of going out of either Pensacola, Panama City or Destin. Any thoughts and recommendations for guides and times to go would be appreciated.

if your wanting bottom fish, depends on whats in season. Things starto t heat up (out of Pensacola) in March, other than that watch for the Cobia run to start.
