    I have so much KINGFISH

    I decided to try something new after smoking some yesterday I decided to make dip.... and it was fantastic.... I smoked it with skin side down and scored it a few extra times to get the seasoning down into the meat added salt and ZATARAINS Creole Seasoning. Add the fish as you go while stirring the mixture I sliced and diced it up seperately to ensure no bones in the dip and to cut out any bloodline. If it is to thick just add more relish
    anyway this is my recipe... I picked it up from reading multiple ones on the Internet just putting in what I wanted.

    Kingfish Dip
    Smoked fish
    2 c cream cheese
    1/4 c mayo
    sweet pickle relish
    1/2 sweet onion
    2 stalks celery, chopped fine
    2 Tbl Worchestershire
    1 Tsp pepper
    I also added more ZATARAINS seasoning in the mix.

    Try adding a little ground cayene pepper, a tiny bit of liquid smoke and some Louisianna hot sauce to kick it up a bit.

    Man, that's good stuff.

    Its made by Jardines - SONTAVA HABANERO - product of Belize - you can get it at most Publix stores I know for sure the one at Atlantic and Hodges
