    I seen a whole hog done once by throwing the whole gutted (wild) hog on a big smoker hair and all for 23 hours.
    At the end they used gloves to slide between the hide and meat (hair was gone by then) to remove the skin and started pulling.
    It was really good and very moist and tender. No rub,injections or anything else. Just whatever you wanted to add after.

    I have seen the hog scalded and scraped to remove all of the hair, gutted and washed, then cooked whole.

    I have cleaned/skinned a small pig, cut in half, and cooked it on BGE cooker.

    We do a small pig almost every year Island Holidays.The wife seasons the pig about 2-3 days before i put it on the spit rod.

    That is cooked on seasoning that makes it look lumpy
