Spit Roasted Pero de Caliente

I figured I start my time at Florida Sportsman off with a favorite dish of mine to share.

I started off by selecting a Grade 1A Roaster and proceeded to prepare it.

I placed in a mojo based marinade that I had handy;

After 24 hours, I used a liberal amount of homemade buttrub and wrapped it for another night in the fridge;

Next up, in to the roaster. I was shooting for 6 hours at 195*, but got tired after 2 and used the microwave.

I served it hot and found that a bottle of 2010 Abstract was a perfect match for it.

    GOSH!!!! That is phenomanol and is a very phallic presentation, I luv the way the hot jucies enumarated out of the skewed hole!!! Just fab... fab, fab fab!
    I am glad to only be a bird hunter with bird dogs...being a shooter or dog handler or whatever other niche exists to separate appears to generate far too much about which to worry.

    Fine job H.Salf! If, I may, to kick it up a notch, save the drippings from the skewed hole. Take your left overs and slice thinly (across the grain) on the bias. Mix your dripping with a chicken stock and combine over low heat. Add your left over tube steak to heat and viola, hot dog chowder! Truly a meal fit for a king.

    And to think that I was going to post our meatloaf dinner with canned sauce and instant mashed potatos from last night. Glad I didn't. I mean, I knew it was pretty basic, but to have had it come online on the heels of this masterpiece! That would have been down right embarassing.

    I don't think anybody will ever top this one. Might as well bring the kitchen site down... folks are going to be afraid to post after this. The weiner that was the final nail...
